With so many of us currently working from home, now is a great time to put a meal plan together. These simple tools(click here for an example), help you get the most from your pantry. In fact, with a little creativity and some crafty ingredient swaps you might be surprised at just how many tasty meals you can whip up from pantry staples or long forgotten items gathering dust in the dark corners of the kitchen.
One of my go to recipes using pantry staples is for sweet corn fritters. Most kitchens have sweet corn so either crack open a can or pop a bag from the freezer for a super tasty quick and easy meal, serve with some canned or frozen veggies and baked potatoes for a budget friendly feast the family will love.

Ingredients(makes 10-12 fritters)
1 cup (90g) plain flour
3 eggs
2 tbsp (30mL) milk
1 can (420g) sweet corn, rinsed and drained or 2 cups if using frozen corn
salt and pepper
oil for frying
Method
This is the base recipe. You can dial it up if you have other ingredients on hand, for example chopped left over veggies from your fridge work really well, you could also add a pinch of dried herbs or chilli powder. Or if you are lucky enough to have a MAGGI Recipe Base on hand you can reduce the flour to half a cup and add a recipe base. Chilli con Carne would be perfect for sweet corn fritters!
